About Chocolate: Most chocolate in the world comes from a few huge global manufacturers. It is then resold to chocolatiers who make it into myriad different bars, truffles, bunnies, and other confections. Bean-to-bar chocolate is something completely different, and recent years have seen a small explosion of American craft chocolate makers. These artisans source their own beans -- typically from organic, fair-trade, very small farms -- and create their bars from scratch, a labor-intensive and time consuming process that involves hand sorting, roasting, winnowing, refining, milling, conching, tempering, and molding. The results are stunning, a world away from the typical fare.
The beans they start with are often from heirloom plants rather than from hardier strains that are easier to grow but have compromised flavor -- akin to the difference between a store-bought tomato and an heirloom variety from the Farmer’s Market (or your own backyard).
A revelation: chocolate, even very dark chocolate, does not have to be bitter! We take the bitterness for granted because of the notorious difficulty and variability in the roasting process. Artisanal chocolate is roasted in small batches, carefully controlled for time and temperature. This greatly reduces the potential for burning and the bitterness that results. This also eliminates the need for the adulterants and flavor-masking agents found in most chocolate. The best chocolate has the fewest ingredients.
We curated this collection after intensive research and tastings -- there are many more makers and bars on the market, so we have tried to bring you the absolute best. All our makers pay living wages, and often much higher wages, to their farmers. None of our bars include emulsifiers, like soy lecithin, or other adulterants, flavorings, and extenders that are used to mask sub-par chocolate texture and flavor. We have concentrated on American craft companies using single-source beans that bring out the flavor of a particular growing region.
